HIKES INTO THE YALE FOREST

Hikes to be offered into the Yale Forest soon. Mount Holly is home to 462 acres that are part of Yale’s Forestry program. The land was given to them in 1922 by the family of Joseph Bowen. He was a graduate of the Yale School of Forestry who was killed when shot down over France in World War one.

The hikes will be held from early October until early November. They are moderate walks along an early road. Learn about the history of the area and visit the plaque that was placed in memory of the young pilot who did not come home.

The hikes are finalized a day or two ahead of time when more is known about the weather. Please leave a message at 802-259-2460 or ddevereux@vermontel.net if interested. There will be several opportunities to join the hour and a half trek.

*** My first hike this season will be held this Thursday at 11 a.m. Plan to meet at Flanders Corner about one half mile south of the Crowley Cheese Factory on Healdville Road.

Happy Maple Monday!

Pumpkin season is officially in full swing, and this week's recipe is one your whole family is going to ask for again and again: Maple Pumpkin Pie Oatmeal Bake.

Think of everything you love about a slice of pumpkin pie — the warm cinnamon, the cozy spice, the smooth pumpkin flavor — baked right into hearty rolled oats. It's golden around the edges, tender in the middle, and sweetened with nothing but our pure Vermont maple syrup. Then comes the best part: one more generous drizzle of maple over the top while it's still warm.

Why you'll love it:
• It's easy. Mix, pour, bake. No fancy equipment and no fuss.
• It's a make-ahead hero. Bake a pan on Sunday and you've got breakfasts ready for the whole week. Just warm up a square and go.
• It's versatile. Enjoy it for breakfast, brunch, or even dessert.
• It's the real thing. Maple syrup gives it a deep, rich sweetness that white sugar just can't match.

Serving ideas: Top a warm square with a dollop of creamy yogurt and a drizzle of maple, or add a handful of toasted pecans for crunch.

Maple syrup has been at the heart of our family for seven generations, and we love finding new ways to bring it to your table. Fall baking is the perfect time to stock your pantry, and a bottle of Plew Farm maple syrup makes this recipe (and every pancake this season) that much better.
